Pune’s temperature might be dipping but the love for having warm food under the cozy blanket is increasing at about the same rate. Going out in the cold is a strict no-no, so staying at home it will have to be. The most agreeable way to keep the body warm during this chilly climate is to eat, drink and never stop.  You’ve probably got the main course for your dinner sorted for most days but we are here to tell you that you can warm your winters with these 3 cold (and) friendly dessert recipes!

Chocolate Chip Cookie (Enormous)

Yes, you read that right. Let’s agree to the fact that there have been times when you don’t feel like making an entire batch of cookies but one big cookie & here we are with the recipe for the lazy craving!

What’s needed?

  • 1 tablespoon white granulated sugar
  • 1 tablespoon brown sugar
  • Pinch of salt
  • Pinch of baking soda
  • 1 tablespoon water
  • 1.5 tablespoon butter
  • Chocolate chips (As per your craving)
  • 1/8 teaspoon vanilla extract
  • 4 tablespoons flour

Steps for that one giant cookie:

  • Preheat your oven to 180°C
  • With that being taken care of, make sure that the butter is slightly soft
  • Now measure & mix all the above ingredients in a small bowl thoroughly
  • Add the mixture to the centre of a pre-greased cookie sheet (Do not start eating the mixture)
  • The mixture can be thin or thick as per your choice – but we recommend that the colder it is outside, the thicker the cookie should be
  • Bake for 15-17 minutes. If the cookie feels little soft, bake for 1-2 minutes more

Serve it on a plate and eat, if you don’t want anyone else at home to share the chocolaty goodness, stand over the sink & polish it off. Then start again from step 1 for the benefit of those in the house howling for your blood.

Gaajar Ka Halwa (Carrot Halwa)

One dessert which has been featured in so many pressure cooker ads, serials, movies and in our houses that it seems like a family member. See for yourself:

  • 1 kg carrot (make sure they are red and fresh)
  • 1 cup milk
  • 1 tbsp ghee
  • Cashews
  • 250g sugar
  • 250g dried whole milk (mawa/khoya)
  • 3-4 green cardamom

Steps for the delicious and juicy Halwa:

  • Place mawa in a microwaveable bowl and microwave it for 1.5 mins
  • Then take it out, stir it, put it back in the microwave and let it cook for another minute
  • Remove it & let it rest
  • Now, wash the carrots, peel them & cut the stalks off the same. After that, grate them
  • Place the grated carrots with milk and ghee in a microwavable bowl
  • Set the microwave at 100 °C for 5 mins & place the bowl inside covered with the lid. Keep a tab on the same
  • Take out the bowl and stir the carrots thoroughly
  • Repeat the same process without a lid
  • Take it out and add cashews, mawa & sugar to it and let it cook for another 5 minutes
  • If the Halwa seems thin, cook for more 2-3 minutes
  • Finally, transfer the Halwa in a glass bowl, add crushed cardamoms to it and mix well
  • Serve it steaming hot

Our suggestion is to make two batches, having Gajar Halwa hot is a sensation that can be matched only by that of eating a day old Gajar Halwa cold. Set aside one portion on day one & relive the happiness om day 2.

Shrikhand Trifle

An Indian dessert with a Western Twist. Aao twist karein!

Needed items:

  • 1 cup shrikhand (Hung Curd)
  • 4 tablespoons powdered Sugar
  • 1 tablespoon cardamom powder
  • 3-4 spoons of butter
  • 1 small bowl crushed biscuits
  • 1 small bowl brown sugar
  • Some strawberries
  • Grated pistachios

Let’s start to make this by:

  • Mix the Shrikhand, powdered sugar & cardamom powder in a bowl with a hand mixer properly. (The Morphy Richards 300-Watt Hand Mixer is a good choice or something similar). Don’t do this while wearing your best LBD, splattering is possible.
  • On a non-stick frying pan, add the butter, crushed biscuits & brown sugar and mix it till all the three ingredients are blended properly
  • Do not let it cook too much or burn
  • Take out 2 mason jars and place the crumble mix right below and the above layer should have the Shrikhand mix
  • Place fresh strawberries on top of the Shrikhand mix as the third layer but only on the sides
  • And in the mid-space put the grated pistachios
  • Now, cover the layer with the Shrikhand mix, the crumble mix, grated pistachios and a freshly cut strawberry (In the order as it’s written)
  • Scoop in and relish

We hope that you try out these recipes and let us know how the Wintery goodness feels – most likely it will be an ice dance in your mouth!
