The Whys and Hows of making a great pizza crust:

What is the most important aspect of a pizza? The dough, the base which holds all the goodness of the sauce and the cheese, a good dough is the key to the best pizza. The basic ingredients needed for almost all types of dough are water, yeast, sugar, salt, olive oil and some type of flour or maida. For pizza dough we recommend first proofing the yeast- mixing a cup of lukewarm water of temperature 100F-110F (cold water is unable to activate yeast while hot water can kill the yeast), 1 tablespoon of sugar and 2 teaspoons of yeast, the proofed liquid is then added to 3 cups of maida to hydrate it for ten minutes. Olive oil and salt is added next and the dough is kneaded to properly incorporate the salt, oil. Salt is essential both giving flavor and acting as a moderator – it actually retards yeast activation and so it is added separately however it is necessary to prevent over-activation of yeast giving the dough a better structure.

Once the dough is well kneaded (signs of a perfect dough is that it should look smooth as a baby’s bottom 😊. Additionally, it should spring back when you touch it) , keep it aside in a warm place covered with a wet cloth. Let the yeast do its’ thing. In an hour or so, you will see that the dough has risen and doubled in size. At this point, give it another good knead (your removing all the air bubbles that had been formed) and let it double in size again.

Baking the pizzas – Once your dough ready, shape it into 4-5 smaller balls. Roll out each one into thin pizza bases. Cover with sauce, toppings (should not be too many or too heavy) and cheese and your pizza is ready to go in the oven.

To get a really crispy and slightly charred crust, pre-heat your oven at the max temp for at least 30 mins before you want to bake. Set the oven to heat from below only, and keep a pizza stone or a tray at the bottom most rung of the oven so that it heats up as high as possible.

Slide your pizza onto the pizza stone/tray (you can use a pizza peeler to insert and remove the pizzas from the oven) and let it bake for about 5-7 mins.
